Instructions for Making UPMA RAVA:

  1. Dry Roast Millet Semolina:
    1. Heat a skillet or pan over medium heat.
    2. Add the millet semolina (upma rava) to the pan and dry roast it for about 3-4 minutes until it turns aromatic and light golden brown. Stir frequently to prevent burning. Once done, transfer it to a plate and set aside.
  2. Prepare Tempering:
    1. In the same skillet, heat oil or ghee over medium heat.
    2. Add mustard seeds and cumin seeds. Let them splutter.
    3. Add chopped onions and green chili. Saute until onions turn translucent.
  3. Cook Vegetables:
    1. Add chopped vegetables of your choice (carrots, peas, bell peppers, etc.). Stir and cook for 2-3 minutes until slightly tender.
  4. Combine Semolina and Water:
    1. Pour 2 cups of water into the skillet.
    2. Add turmeric powder and salt to taste. Mix well.
  5. Cook Semolina Mixture:
    1. Bring the water to a boil.
    2. Gradually add the dry roasted millet semolina (upma rava) while stirring continuously to avoid lumps.
  6. Simmer:
    1. Reduce the heat to low and cover the skillet with a lid.
    2. Let the upma simmer for about 5-7 minutes or until the millet semolina is cooked through and has absorbed the water, stirring occasionally.
  7. Serve:
    1. Once the upma is cooked and reaches your desired consistency, turn off the heat.
    2. Garnish with freshly chopped coriander leaves if desired.
    3. Serve hot with a squeeze of lemon juice on top if you like.
